In the course of aging, a quarterly racking is carried out, which also assists in the clarification of the wine (as filtering or aggressive treatments are not performed) in order to preserve the natural characteristics of the wine. Following its aging in the barrel, the wine is clarified with egg white and subsequently bottled, aging in the bottle at least for two years before placing it in the market.
