The 2019 Chablis Butteaux 1er Cru might well possess the finest aromatics among Servin's Premier Crus this vintage, leaping out of the glass with vivacious lemon zest, Granny Smith apple and crushed stone notes, and then becoming more floral with aeration. The palate is well balanced with a slightly reduced opening that works in its favor. There is wonderful purity to this Butteaux, and although a little oak still needs to be assimilated with bottle age, give it a couple of years and it will be positively singing.
